Maintaining finance lookup tables

The finance lookup tables are maintained separately for security reasons and because different financial databases can have different lookups.
The way you maintain finance lookup tables is exactly the same as the way you maintain other lookup tables. The only difference is that you access the finance lookup tables though Module > System > Maintain Lookup Tables - Finance.
